Update for Week 6

Week 6!  Half way through the first phase (there are 4 total).  I am feeling great!  I am down nearly 11 pounds, have lost 3″ from my waist and hips and 3.5″ from my under bust measurement.  Legs and arms are down a couple of inches also.  I am definitely feeling more fit and toned and am able to do the exercises with increased weight and/or reps.  My greatest challenge is getting enough sleep!  With all there is to do in the day, it is tough to get to bed by 9 or 10 and I find myself hitting the sack at 11 or 12 way too many nights.  I bought a double walled water bottle that has a “straw” devise and find that by sipping my water rather than guzzling it I am having an easier time getting it down and am drinking more than I was previously – interesting…..


My husband is down about 15 pounds and looks so much better!  I think we are both loving this life-style, but it is a bit crazy at times trying to fit everything all in!  If any of you have joined me in this challenge I would love to hear how you are doing!

Baby Izze Update 3

SAD day!  Izze’s birth mom is contesting relinquishing her parental rights.  We are still dealing with major GI issues due to her birth mom’s drug usage – including cocaine usage through 6-8 weeks prior to Izze’s delivery.    It seems surreal to me that she would really do this – I feel like it is so selfish on her part.  Izze will be in such bad circumstances if she is awarded to the birth mom.  The birth mom is currently living in an unfinished basement with a 70+ year-old male sponsor.  She has no means of supporting her much less any type of “home environment”.  She is currently on parole (as is her boyfriend) and has previously lost custody of 2 previous children due to child endangerment charges.  This is heart-breaking.  I am praying that her heart will soften and that this will not turn into a long, drawn out legal battle.  We so LOVE this little girl – I can’t imagine losing her after all this time….  May what is best for Izze prevail!  Praying, praying, praying…….

Update for Week 5

Had a great week for both exercise and nutrition.  I have only lost another 1/2 pound this week, but am feeling great physically and seeing improvement on my exercise – I am able to do all reps and with an increased weight/resistance.  LOVING that I do not really even have to think about what to eat – only about prepping and eating on time.  I am sure that I can do this program indefinitely!  Don’t know if I had mentioned that my husband is doing this with me, but that has been incredibly satisfying!  He is down a total of 13 pounds (to my 10) and has lost lots of inches as well.  It feels great to be able to accomplish this goal together.  My husband has had the greater challenge as he has been traveling quite a bit for work.  This means he has to really think ahead to prepare meals in advance and come up with creative ways of cooking the food in a hotel room.  We are getting smarter and better at Living the Life!  Here’s to another great week!

Strawberry Rhubarb Ice Cream

  • 3 cups sliced fresh rhubarb or frozen unsweetened sliced rhubarb (do not thaw frozen rhubarb)
  • 2 cups sugar
  • 2 cups water
  • 1 cup sliced fresh strawberries
  • 3 cups miniature marshmallows
  • 3 tablespoons lemon juice
  • 2 cups whipping cream
  • Red food coloring (optional)

In a 4-quart pot combine rhubarb, sugar, water, and strawberries. Bring to boiling; reduce heat. Simmer, uncovered, 10 to 15 minutes or until fruit is very tender, stirring occasionally. Reduce heat. Add marshmallows and lemon juice. Cook and stir until marshmallows are melted. Transfer to a very large mixing bowl; cover and chill in the refrigerator 4 hours or overnight until completely chilled.

In a chilled large mixing bowl beat whipping cream with an electric mixer until soft peaks form. Fold whipped cream into chilled fruit mixture. Stir in enough food coloring to reach desired color, if desired.

Freeze ice cream mixture in a 4- or 5-quart ice cream freezer according to the manufacturers directions. Transfer to a freezer container. Cover and freeze about 4 hours or until firm. Makes about 10 cups (twenty 1/2-cup servings).

Update for Week 4

This week has been a bit challenging!  I gained 2 pounds on Tuesday morning (following my Monday post) – VERY discouraging as I have been perfect in my eating and my exercise.  I ran out of my thyroid medication and went about 5 days before I could get in to get a refill…..  NOT smart!  I ended this week down a 1/2 pound – for a total loss of 9.5 pounds for the 4 weeks (that means I lost 2.5 pounds for the week, but that included the 2 I had gained) – thus the real loss for this week was only 1/2 a pound.  I do know from previous weight loss that this is fairly typical of me – a bit of a plateau – and then I will suddenly drop again, so I am certainly not ready to throw in the towel!  I really need to work on getting to bed earlier since we are getting up at 6 each morning to start our crazy day!  Getting adequate sleep has been by far my greatest challenge.   I am seeing a huge difference in my body composition – things are definitely getting firmer and more toned and defined and clothes are getting looser and I am wearing things I have not been able to get into for over a year.  Overall, feeling great about the challenge – but am hopeful the scale will get moving a bit faster this week.  Here’s to another strong week!

Spaghetti Casserole

1 can spaghetti sauce
1/2 lb bacon, cooked
1 pkg fresh sliced mushrooms
1 lb hamburger, cooked with onion
oregano
6 oz spaghetti, cooked


Simmer all ingredients (except spaghetti) for 10 minutes.  Add noodles and 1 1/2 cups of grated cheddar cheese.  Place in 9X13″ pan and top with additional grated cheese.  Bake at 350 for 30 minutes.  


Best spaghetti EVER!!!!  Can leave mushrooms out if not a family favorite.

Update for Week 3

So I just completed week 3 of the Live the Life challenge.  I am down 8 pounds, have lost 2″ off my waist, just over 3″ from my hips, 2″ from under my bust, and additional inches from legs and arms.  The biggest challenge again this week has been getting adequate rest (with family here and a new baby in the house), but I will be back to a more regular routine mid-week.  I was able to successfully complete all sets of my exercises this morning (I have been just a couple short of the last set last week) and feel like I am getting stronger each day.  I love that I am never really FULL, but never really hungry either.  Here’s to another great week!!!!!

Baby Izze Update 2




Baby Izze was released to come home today!!!!  She has spent 12 days in the hospital detoxing from the birth mother’s drugs.  It is SOOOOOO nice to have her at home!  She is beautiful and she is surrounded by people who love her!  She is back to her birth weight of 6 1/2 pounds, is eating well, but still having some trouble with her digestive system and her poor bottom is absolutely raw from all the toxins.  She will continue to be on morphine for another 20 days or so to assist her in releasing all the toxins that are in her little body.  She sure does love her adoptive mother Sarah and looks for her whenever she hears her voice – it is so cute!  This experience has certainly helped me to appreciate more fully having an eternal perspective and the understanding that that knowledge gives to me and my family.  I am grateful for a wonderful daughter-in-law (ALL 3 of my daughter-in-laws are amazing) and a son who have big hearts and will do anything for Izze.  We are sure looking forward to having a baby in our home again and the wonderful experiences that she will bring us.  We love all 6 of our grandchildren and are grateful for the joy that they bring to us!  Here’s to a wonderful new adventure!  Welcome HOME Izzebel Cadence Mathie – we love you!
