Strawberry Spinach Salad

My sister Karla shared this recipe with me.  Truly one of the best salads I have ever had!  As usual, I forgot to get a picture, but I made this for guests last night and they raved about it too!


1 large plastic bin baby spinach (think Costco)
1 large plastic bin spring mix
l large bin (2 pounds) strawberries, thinly sliced
2 cups or more feta cheese
2 red onion, thinly sliced (I did one and it was plenty)
1 lb bacon, cooked and crumbled (I used turkey bacon because I prefer it)
2 cups caramelized cashews

Caramelize cashews by putting a thin layer of sugar in a heavy frying pan.  Heat slowly until sugar melts (I had to add 2 T butter to get this to work right).  Stir until completely coated.  Pour onto wax paper to cool.  Assemble salad and dress just before serving.  (May add chicken to use as a main dish).

Dressing: 

3/4 cup red wine vinegar
1/2 cup vegetable or canola oil
1/4 cup sugar
1/2 cup strawberry jam
1 tsp yellow mustard
1/2 tsp salt

Mix in blender until smooth.

NOTE:  I also added diced avocado – that is a must for me on this.  Adds a lot of flavor!

Painted Cupboard Reveal

All of the woodwork in my house was a dark cherry stain.  They were beautiful!  BUT after 13 years of living with the dark stain, I was ready to lighten things up!  Even my painters were having a hard time covering up the cherry stain.  I am in love with the lighter cabinets!  The space feels so much bigger and is definitely a much brighter space!  I know there are many that think it is a sin to cover nice wood, but I don’t really care what others think.  It is my space and I am loving it.  I had Brianna come and take pics for me and just let her shoot whatever she wanted.  Super happy with the end result!  
One of the things that many would consider a disadvantage is that everything shows.  I personally love this.  I can see dirt and stickiness and take care of it right away.  On the darker wood, nothing shows, but it is dirty and just gets worse with time.  It does my little OCD heart good!
The worst part of the project for me was putting the shelves back together.  I wish I would have counted the little holes on the sides and marked on a piece of paper where I had each shelf, as I had to move them multiple times to get the spacing just right.  It was a long and painful process for me!  I didn’t even consider how much time would be wasted putting the shelves up, taking them apart, moving the shelving, etc.  Ridiculous!  My kitchen cabinet with the glass doors was one of the most time consuming.  
I took advantage of the complete removal of everything and we did some weeding out.  I know I have lots of stuff I have collected over the years and it is probably still too much, but I love it and many of the things I have collected have special meaning to me.  My husband reduced the amount of books by about 50%.  I would definitely do it again.  
I waited 48 hours after the last coat of paint to put things back together to give the paint time to cure.  That is definitely a requirement to make sure that things do not stick to the fresh paint. 
We replaced the wood desk top with granite and I was stunned at the difference that made!  From the time we purchased this house (13 years ago), we have struggled with the finish on the desk top.  It gets daily use and the finish was always coming off.  LOVE the look of the granite and of course, the no maintenance.  🙂
LOVE my end result.  SO glad that I had the painters change the paint color after the first coat, as the first color we tried had WAY too much brown (see previous post).  I would do this again in a heartbeat!  Thanks for stopping by!

Snickers Brownies

My latest Pinterest attempt – it was amazing!!!!!  You must try this!  See below for original post website.

Ingredients:

2 cups chocolate chips
3/4 cup (12 Tablespoons) unsalted butter, sliced
1 1/2 cups sugar
2 teaspoons vanilla extract
4 eggs
1 2/3 cup all-purpose flour
1 teaspoon salt
2 cups Snickers, cut into chunks (About one bag of fun size snickers)

Directions:

  1. Preheat the oven to 350 degrees and line a 9×13 baking dish with parchment paper. Set aside.
  2. Melt the butter and chopped chocolate in a medium saucepan on medium heat, stirring constantly, about 5 minutes. Whisk the granulated sugar into the cooled chocolate/butter mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently fold in the flour and salt.
  3. Once combined, spread half the mixture on the bottom of prepared baking dish. Sprinkle snickers bits over the brownie batter as evenly as possible and then spread the remained half of the batter over top.
  4. Bake for 30-35 minutes or until the brownies begin to pull away from the edges of the pan and the top is crackled.
  5. Let cool completely before slicing. This is very important as the brownies will fall apart if sliced when warm. To speed up the process, put the brownies in the refrigerator for about 1 hour. Cut into 24 pieces and serve immediately.

Lots to be said about the remodel.  First of all, it still seems a bit surreal to me.  I have dreamed of this for 13 years.  It may not look like much, but it is so much lighter and brighter and I was able to more then double my closet space without adding on.  We did lose one of our doors to the master bedroom, but it was a great sacrifice.  The double doors were very pretty, but the functional closet makes my life so much easier!  

One of the big surprises for me was the 3-full days it took me to get everything back into the bathroom and closet.  One of those days I had David helping all day too.  For the first time in our 35 years of marriage, he went through every drawer and all the clothes and shoes in his closet and sent a bunch of stuff to DI (Goodwill Utah style).  I thought I would have us back together in a day.  Oh, how I under-estimate sometimes!

I am in love with the wall color – which I used in the bathroom and closet.  It is Sherwin Williams Waterscape.  I like it so much I am already planning to repaint one of the bedrooms upstairs the same color.  

The tile came from my flooring guy, Jeff at Factory Flooring in Tooele.  His number is 801-250-0395.  He has done all the flooring in my house and I love working with him.  He is familiar with my home, my style, and knows the overall look I am going for.  After meeting with the tile places recommended by the contractor, I was totally depressed as I could not even come close to staying within my budget.  Jeff helped my stay close to budget and had a great selection to choose from.



I went through American Home Services to find my contractor Will French, who then assigned a crew to do the job.  I affectionately called these my Russian Boys as both Peter and Michael, who are brothers, are from Russia.  They started with the job with Igor, also Russian, who assisted in the demolition, etc.  The “boys” came when they said they would and worked hard!  They were clean and conscientious of my space and things.  Peter had a great sense of what I was desiring for the finished project and made changes to the design the first day that were just simply better in every way!  I could not be happier with the finished product!  Peter and Michael seemed to really enjoy the project and consulted with me throughout the process.  Love my Russian Boys!  Definitely planning to use them on future remodels!

When I first suggested putting in a ceiling fan in the bathroom, they thought I was crazy and told me no one puts a fan in the bathroom.  I told them I was hormonal and at my age if I wanted a ceiling fan in the bathroom I would be having one!   🙂  SO glad I did!  I start every morning with 40+ minutes in an infared sauna, followed by 20-30 minutes of cardio.  When I get out of the shower I am still sweating!  The ceiling fan is a life-saver for me!

Most of the bathroom fixtures came from Standard Plumbing, but I purchased the ceiling fans(I put one in the bedroom too) from Houzz.com.  Chrome waste basket and toilet brush came from Wayfair.com.

STILL waiting on my plantation shutters (they have been ordered) through Stanfield Shutter and the barn door (being built by my son in AZ) for the closet.  But at least we are functional and I could not be more pleased with my end result!

NOTE:  I totally forgot to give a big shout out to Bill at Cutting Edge Closet and Design 801-735-8940.  He had a great vision on the closet design and implemented my idea of using the pull-downs to utilize ALL space effectively.  I mean, why do builders always put shelving at the top of a closet?  No one can reach them anyway!  Everything we had on our shelves went to DI as it had not been used in 13 years.  :0

On Thursday we started our master bathroom remodel.  On Friday, we had painters come to begin painting all our cherry stained hardwood cream.  I figured if my house was going to be a construction zone, we may as well knock them both out at the same time.  This has been super eye-opening and we have already learned some expensive lessons.  

Thursday, when “my Russian boys” with American Home Services (801-224-1813) came out to begin the bathroom remodel, we completely changed the entire layout that had previously been agreed upon.  I can’t complain about it one little bit, since the new layout is better in every way.  BUT change means more money and likely more time.  Lesson One – expect the unexpected.  


We also discovered the toilet had been leaking.  Doing the remodel was actually a blessing as the longer that went on the worse the damage would have been.  


I am usually very decisive when it comes to choosing things for the house – i.e., paint colors, hardware, furniture, accessories, etc.  However, when completely gutting the bathroom and starting – literally from the ground up – I found there were way too many options and trying to narrow things down was more difficult than I imagined it would be.  Our contractor sent us to Standard Plumbing to choose fixtures, tub and toilet.  I had been looking online for months and had some idea of what I wanted, but it was very overwhelming nonetheless.  I was thrilled when I realized that the fixtures have a whole line of items made to go together.  So, choosing the sink faucet was pretty easy for me and then the rest of the items were just a matter of stating which ones we needed.  I did not care for the light fixture that went with my faucet choice, but the sales woman was quick to let me know that there was another one that looked great with it and was her personal favorite.  It was a pretty easy process and I was super relieved to get that all decided on.


As for the paint, I did not have the same luck.  My painters (Fullmers Painting 801-341-8963 – www.fullmerspainting.com) gave me several paint choices and applied a small amount of each color to a cabinet front.  I chose one that would have a bit of contrast to the white trim and plantation shutters.  Once the paint was applied I realized how brown the “cream” color was.  I tried to love it, but found myself waking up in the middle of the night in a cold sweat.  I just could NOT live with the color.  My dream of having a more modern, clean feel on the main level had been completely squashed by choosing that color.  The next day I approached my painters with making a color change.  I am sure they were ready to wring my neck, but were super awesome about it.  We found an amazing color that is everything I had hoped for and he began putting on the “second coat”, which was actually the “first coat” of the new color.  THIS was one expensive lesson.  My advice is have the painter paint an entire door front with the chosen color and check it out throughout the day so that you can make sure you are not picking up the wrong undertones, etc.  The color I originally chose was way too brown and very unappealing to me.  I could not be happier with the new color.  Although it is costing me more, it would have been more expensive to “try to love it” for 6 months or so and then have to start completely over.  Since we were still applying a second coat anyway, the cupboards were still taped, doors removed, etc and so not too big of a deal.  It basically cost us a “third coat” of paint.   Lesson learned – Be absolutely SURE before proceeding!  


I think I will sleep well tonight.  My OCD heart is SO ready to get things put back together but I am trying to stay down in our basement apartment as much as possible so that I will be patient and give things plenty of time to cure.  The bathroom will take several weeks to be completed, but that part is easier to live with.  Once paint is dry I will be able to use the kitchen, family room, laundry room, and put the upstairs bath back together.  There are lots of cabinets, shelving, etc in my house and everything with a cherry finish is being painted.

COURAGE

Courage has taken many forms and worn many faces over the years.  We have stared death in the face 3 times with 2 of our sons, struggled through a job loss, moved 7 times, sent all three boys on 2-year missions, struggled with my health (involving multiple surgeries and lots of diagnoses that were very frightening), and all the growing pains of raising three boys. This past year I have been faced with choices I NEVER thought I would be facing. My youngest son moved back in with us February 1st of this year as he is currently going through a divorce.  He has two adopted daughters – they were 13 months and 3 1/2 at that time.  Jonathon has sole physical custody of the girls and we are going through the court system to make that a permanent status.  I have been grand-“momming” ever since.  That was the choice for me that took a great deal of courage.  Allowing myself to divert my full attention from my business to my granddaughters.  I was afraid – I worried about how I would keep up with the attorney fees for the divorce and child custody.  I was fearful that I would not be able to figure out how to do both.  BUT I knew I HAD TO.

Courage.:

These days my days are filled with sticky kisses, diapers, wiping runny noses reading stories, coloring/painting, bath time, bed/nap time, chocolate milk, and lots of “I love yous”.  When Izze tells me she loves me, I tell her I love her more, and she responds with “I love you most”.  Life does not get better than that.  No amount of money can buy you that kind of joy and happiness.  I know, your life is filled with these things too.  The strange part is, I am 55 years-old next month and currently co-parenting with my husband and my youngest son helping to raise his two daughters.   I have 10 grandchildren.  

Steve Jobs on trusting your instincts:

This has taken a toll on my real estate business and trust me when I say, it is exhausting!  At my age, I do not have the same energy levels that I had in my 20’s.  BUT I feel extremely blessed to have the girls in my home and am grateful I am in a position to love and care for them.  When David and I married 35 years ago, we had our lives all mapped out (sound familiar?).  We were going to have 5-6 children and live in a beautiful home. I was going to stay at home and be a fabulous wife/mother.  Life certainly would be our own little fairy tale.  We would wait at least a year before starting our family to give us time to get our feet on the ground.  Our first curve ball was learning that I had gotten pregnant on our honeymoon.  The second curve ball came quickly when I miscarried that baby.  We had been excited about welcoming an addition to our family.  In spite of our doctor’s advise, we got pregnant again immediately.  

The arrival of Jason wasn’t everything I expected.  He was allergic to milk (which took us 6 months to figure out) and had to be on medication due to a spastic stomach (the opening to empty the stomach was closing completely causing severe pain and projectile vomiting-I don’t remember the medical term – it has been 34 years now).  If he did not have something to suck on ALL the time he was miserable.  I felt like “Mother of the Year” when we figured out the milk allergy and he became calm and happy all the time. Of course, the doctor’s were not any help with that, but a good friend who went through a similar experience with her own babies. I always thought Jason was perfect – it just took us a bit to figure him out.

The arrival of our second boy, Brian just 18 1/2 months later was a rather frightening experience.  He came 6 1/2 weeks early in a small hospital not equipped to handle a premie.  The doctor on call refused to come in while I was in labor (you know, early Sunday morning and he had better things to do) and so the nurses were unable to even try to stop my labor.  When Brian was born a nurse told the doctor he was struggling to breath.  He told her he had just given him a 10 on the Apgar scale and to put him in the nursery – he was perfect!  Thankfully, the nurse was not convinced, and called our pediatrician to come take a look.  He had interned with premature babies back east and knew immediately he was in trouble.  The pediatrician put a nurse with him 24/7 and put him on oxygen.  He made it until the next morning before his lung collapsed.  The doctor was walking in to check on him as the nurse came flying out of the nursery to get him.  The pediatrician did not have the necessary “tools” to re-inflate the lung, but used what he could and he miraculously survived until Life Flight arrived to transfer him to Stanford Hospital – over 2 hours away.  The delivering doctor had his rights revoked and was never able to deliver another baby due to the horrendous circumstances he put us in.

We waited 4 years to have our third son, thinking we just did things too fast with our second.  He tried to come 9 1/2 weeks early.  They stopped my labor and made it to 4 1/2 weeks early.  He should have been okay, but also had problems.  As soon as his head hit the birth canal his heart rate went to an alarming low. The cord was wrapped multiple times around his neck.  As soon as he was born the doctor started bagging him with oxygen, but he was not responding.  They could not figure out what his problem was, but without life support and another Life Flight to Primary Children’s Hospital, he would not have made it.  The doctor had us bring the older boys to say good-bye as he was afraid he would not pull through.  It took about 72 hours, but he did finally start to have his own “systems” kick in and start working.  Slowly he came off life-support.  

Not exactly the life we had planned……

Life has been full of curve balls and unexpected life changing events.  Most of which, I would not care to go back and repeat.  However, as I look back on my life I realize that I would not have experienced any real growth if my life was lived in a perfect home, with a perfect husband, and no struggles or problems.  The events of my life – and especially those of the past 7 years have created a change in me.  I am less judgmental, more kind and compassionate, more quick to think the best of others.  I am softer (I needed to be!), I have a bigger heart, I feel no need to criticize others.  I understand that we are all struggling with some sort of trial – something that feels huge to us, overwhelming and I know first-hand how the smallest kind gestures lighten our load and make us feel like somehow, we can handle it. If you have not yet experienced that – it is coming……  I feel confident the blessings we are seeking for these girls is coming….  Just in HIS time.  

Change your heart:

So many people have said, “I don’t know how you are doing this.”  Is there a choice?  My heart says absolutely NOT!  I love those little girls with all my heart and feel blessed and privileged to love on them.  The rewards are tremendously greater than the personal sacrifice!  There is no amount of money that can make up for the time I spend with these precious girls. Creating a refuge from the storms of life is the only option I can live with.

One of the greatest lessons I am learning is to let go of things I cannot control.  Please note I said LEARNING – certainly not there yet!  I have had to learn to put things in the Lord’s hands and trust that in HIS time things will all work out.  The fear comes from not knowing how long or how much debt…..  The faith comes from seeing God’s hand in my life throughout my life.  I KNOW I can count on Him to get me through even when I do not understand the why or where or when of my circumstances.  I know that someday I will look back on this period of time with nothing but gratitude in my heart and that I will love these girls and cherish these memories FOREVER.

I have done well in my real estate career and am very passionate about it.  BUT my favorite accomplishment in my entire life has been being a wife and mother,  It is my way of thanking God for my many blessings.  It is my way of trying to make my world a better place.  When I create a loving environment in my own home – it creates a little piece of heaven for me and all who enter to feel at peace.  Someday we will realize that the things we spend most of our time on do not have any lasting impact.  I will never be sorry for slowing down a bit and opening my heart and doors to my son and his girls.  FAMILY. IS. WHAT. MATTERS. MOST.  You can choose differently for yourself and I will not judge you, but I know what fills my soul with the most light and happiness – and it is family.

Caramel Apple Pie Bars

90 Nilla wafers
7 1/2 T melted butter
3/4 cup sweetened condensed milk (I used the whole can)
3/4 tsp cinnamon
1 1/2 granny smith apples, peeled, cored and diced (I will use 2 apples next time)
3 cups white chocolate chips
30 rolos, unwrapped
3/4 cup chopped pecans

Preheat oven to 350 degrees and line a 9X13″ pan with foil – leave some hanging over the end edges so you can lift the whole thing out when baked and cooled.

Process Nilla wafers in food processor until fine crumbs.  Add melted butter to crumbs and mix until well blended.  Press into prepared pan and bake for 5 minutes.

Stir sweetened condensed milk together with cinnamon in a small bowl.

Sprinkle apples, white chocolate chips, rolos, and chopped pecans over hot crust.  Pour cinnamon sweetened condensed mixture evenly over the top.  Bake another 20 minutes.  Cut when cooled.  VERY rich so small portions are adequate.

Chocolate Mint Brownie

Brownie:

1 cup butter
8 oz coarsely chopped semi-sweet chocolate
1 1/2 cups sugar
4 eggs
2 tsp vanilla
1/2 cup plus 3 T flour
1/4 cup cocoa 

Melt chocolate and butter in microwave in 30 second intervals, stirring in between each interval until chocolate and butter are smooth.  Cool 10 minutes.

Line a 9X13″ pan with parchment paper leaving an overhang on the edges.  

Whisk sugars into cooled chocolate mixture.  Add eggs, one at a time, whisking well after each addition.  Whisk in vanilla.  Fold in remaining dry ingredients and whisk until smooth.  Pour batter into 9X13″ pan. Bake at 350 degrees for 20-25 minutes.

Mint Frosting:

1/2 cup butter, softened
2 cup powdered sugar
2 T milk
1 1/4 tsp peppermint extract
1 drop green food coloring

Beat butter until smooth and creamy.  Add powdered sugar and milk.  Beat on low for 2 minutes; then beat on high for 1 more minute.  Add peppermint extract and food coloring (if desired) and beat an additional minute. Frost brownies and refrigerate 1-4 hours.  This allows the chocolate layer to go on more easily.

Chocolate Layer:

1/2 cup butter
1 heaping cup semi-sweet chocolate chips

Microwave in 30 second intervals; stirring after each interval.  Once melted and stirred smooth, spread over chilled mint layer using an off-set spatula.  Refrigerate.  Pull brownies out by the parchment paper and cut.  I like to remove mine from the refrigerator about 15-20 minutes prior to cutting.  Store in refrigerator.

Peanut Butter Chocolate Chip Bars



1 cup butter 
2 cups sugar
1/2 cup peanut butter
2 eggs
1 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1/4 tsp baking soda
1/2 cup or more semi-sweet chocolate chips

Melt butter and brown sugar together in pot on stove top stirring until melted.  Turn off heat and add peanut butter.  Stir until smooth and allow to cool.

Combine flour, baking powder, and baking soda in large bowl and set aside.

Add eggs to the butter and sugar mixture stirring well to blend.  Add vanilla and stir well.  Add flour mixture to butter and sugar mixture stirring until well combined.  Stir in chocolate chips (leaving some for sprinkling on top of batter).  

Spoon batter into a 9X13″ greased pan.  Using an offset spatula spread batter to edges of pan.  Sprinkle with remaining chocolate chips and bake at 350 degrees for 20-25 minutes.  Allow to cool before cutting into squares.  I cut my pan 4 rows by 6 rows – this will give you 24 bars.

Cafe Rio Copy Kat Dressing


Ingredients:
  • 1 packet TRADITIONAL Hidden Valley Ranch mix (not BUTTERMILK)
  • 1 c. mayonnaise
  • 1 c. buttermilk
  • 2 tomatillos, remove husk, diced
  • 1/2 bunch of fresh cilantro
  • 1 clove garlic
  • juice of 1 lime
  • 1 jalapeno (we like it SPICY so we kept the seeds in it, if you like it mild, just remove the seeds)
