1/2 egg yolk
4 egg whites
1/3 cup cooked brown rice
1 slice turkey bacon
1/2 cup chopped mushrooms
1/2 cup spinach
1/4 onion
1/4 bell pepper
2 T salsa
2 T mozzarella cheese
Cook veggies, bacon, and rice in fry pan. Blend eggs and add to cooked veggies. Cook as desired adding cheese at the end to just melt. Top with salsa.
