Chicken Mexican Omelet

2 oz cooked chicken
1/4 cup cooked brown rice
1 slice cooked turkey bacon
2 T onion, chopped
2 T fresh parsley and cilantro
1 egg
3 egg whites
2 T salsa
1 cup spinach (chopped)

Saute chicken, brown rice, spinach, bacon, onion, parsley, and cilantro in fry pan sprayed with Pam.  Blend eggs and pour over the top.  Cook omelet style.  Top with salsa.  Soooooo good!
