1 egg
4 egg whites
1/3 cup brown rice
1/4 bell pepper
3 large mushrooms
1/4 onion of choice (I like red)
2 T salsa

Cook veggies and rice in a pan sprayed with cooking spray.  Add egg mixture and cook until eggs are set.  Prior to eating top with salsa.
