12 corn tortillas
1 lb ground beef
1 onion
1-15 oz can tomato sauce
2 small cans enchilada sauce
1 lb longhorn cheese
Break tortillas into bite size pieces; brown meat and onions; add tortillas, sauces, and 2 cups grated cheese. Pour into casserole and sprinkle remaining cheese on top. Bake at 350 degrees for 30 minutes.
This really is the lazy way to do enchiladas and tastes just the same!
